BAK KUT TEH ,  Reral taste of Singapore,Asia

    Bak Kut Teh soup kind of famous Chinese in Malaysia, Singapore or China.
Often enjoyed with white rice, and a lot of people vary with some material
to add flavor like tofu, mushrooms, and lettuce.
Recipe ala Teochew Bak Kut Teh

Spices (insert into the cloth bag to avoid spilling everywhere in the soup):

  • 1 cinnamon stick +/- 5 cm depending on taste
  • 4-5 cloves
  • 1 teaspoon white pepper seeds (do not use black pepper for this style Teochew)
  • 1 tablespoon kit chee (red-red-small)
  • 2 star anise / fennel china
Seasonings without bag

  • 2 unpeeled garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon salt (sodium diet carefully!)

meat:

  • 500g chicken / pork, can be mixed between the ribs, the usual meat and
  • offal for the love

vegetables:

  • 2-3 pieces of lettuce washed

HOW TO COOK:
1. Insert meat, garlic, and seasoning bag into the pot, add water as needed.
2. Bring to a boil, keep the water should not be reduced, remove the meat fat floats.
3. Add soy sauce and salt.
4. Cook over low heat until meat is tender or according to taste.
5. Add a few pieces of lettuce before serving.

To chilli: cut green chilies or red pepper into small pieces, add the soy sauce and crushed red pepper pieces, chopped garlic can be added for those who like.

For the variant Hokkien, add black pepper and soy sauce multiply, also add some mushrooms hioko (sliced more delicious) and beancurd or cut kering.Untuk variant people know khonghu, add various kinds of potions, there are even adding kordisep (expensive!) , ginseng root.
